I am putting together a list of all the PMS colors for our marketing materials. Is there a PMS color for white or is it simply just "white"?

Well that depends. There is a pantone transparent and opaque white and clear for mixing colors, and I would guess there is a number for and opaque white for use on colored paper or some such weirdness, I dont have the speciality color guide at hand to give you the number.

But if you are indicating where no ink, (ie. paper showing though) I would not list it as a color as "White" or just "Paper White". Using Pantone indication for color spec's would throw most people for a loop.

One note: While Pantone colors are usefull, you should also provide color CYMK mixes and perhap RGB values. Many Pantone colors are not reproducable with CYMK and or most digital output devices. So someone will need CYMK mixes some point in time beter to decide now on standard to pervent trouble down the line.
