I read in one of the tutorials that you must change the background color intro grey to make some effects hower I tried it on photoshop and altough I found an option of bg color it still displays white is there something else I need to do?

Well you actually need to fill the background with the desired color:

Make new layer/picture
Move the layer to the lowest position in the layer menu (not needed when starting a new file)
select layer
select all (ctrl+a)
use the paint bucket tool to fill with gray.

well... you cna not bother with selecting all on your background layer, since it should be empty anyway, and the paint bucket will fill it to the document bounds. Also, once you've filled it with your desired shadeof grey go to layer>>new>>background from layer...

If you press CTRL-DELETE (or COMMAND-BACKSPACE) in photoshop, the entire layer will be filled with the background color you've selected. Unless there's a selection, then it'll only fill the selection.
