Due to that offer from Dreamhost, I put my viol.com domain up and running. During these few days, I did nothing, just a main page with some non-interesting information on it. Today, I was to check my mailbox and I had 517 messages (directed to *@viol.com).
Isn't it amazing? 517 messages in only 3 or 4 days!! I think the problem is that I have to turn off the catch-all feature. I'll take a look at it.

ADDED: uhmmm, I can't see a way to turn-off the catch-all feature of my domain. This is bad. Does anyone of you, Dreamhost users, know how to disable this "feature"?

The KBase of Dreamhost says that "by default, domains registered with us have a special "catch-all" email alias in place that will catch EVERY email sent to ANYTHING @thatdomain. We set it up to forward to the email address you provided when you registered the domain."

Okay, but I want it disabled. Catch-all addresses are a pain these days of flooding spams...
Any help?

ADDED 2: just found how to do it. Now I am struggling to understand how to create a simple email address. So confusing...

If you want to add an email BOX (creates a POP3 box you can direct mail to, and download from, or access it via IMAP) do so in "mailboxes" if you want to add an ADDRESS (an "email alias" or also called a "forwarder") do so in "addresses"

517 messages is insane. I'm assuming that those were in limbo somewhere since you were apparently NOT getting *@viol.com before you changed to DH, then when you signed up, transferred the domain, boom you got the backlog of mail coming in. If you truly got 517 emails in 4 days I pity you and offer my sympathies. I really can't imagine that however.

And having *@viol.com come to you is not a feature, it's the way things go man, you own the domain name after all

It can be a bit confusing but rest assured it's all possible so don't get frustrated, the kbase is great and the forums are getting more active daily, and there's contect sensitive help in the panel itself at the bottom of the left hand navigation.

Thanks JK.
I already found how to get rid of my catch-all email. These spam messages will not be a problem because they are directed to some addresses, ending in viol.com, that are not of my interest (some good addresses are always targeted by spammers, like webmaster @ something.com, etc., though).
The mailbox and address creation is sort of confusing, not intuitive, specially those m*numbers* user names, but I'll get used to it.
