I finally decided to build my avatar in 3d Studio Max. I have in my head what I want it to look like and everything, but...

...building it with primitives seems kind of shitty, what kind of tools should I use for a flesh-type feel?

Most popular technique for modelling organics in Max these days is poly modelling with meshsmooth. You can either start with a basic object (multi-segment box, etc.) or just start drawing polys from scratch. There are some cool free tools out there. Might want to start with Meshtools and CSPolyTools from scriptspot.com

NURBS are popular in other packages, but NURBS in Max suck.

Patch modelling is also popular.
