When I try to use distiller on an eps I created in PageMaker
it says: "Error: Helvetica not found. Font cannot be embedded. bla, bla... Flushing rest of file to end of file."

And therefore I can't a pdf out of it.. The funny thing is that I don't use
"Helvetica" anywhere in the layout. I eve tried to copy the Helvetica-font
to the map where the pagemaker-document is located but nothing
seems to help..

Pagemaker can be tricky with fonts. Somewhere in the document there may be just a space - no visible text - that was created in Helvetica. The best way of trying to locate it (and it may even be out on the pasteboard) is zoom right out and view each page or pair of facing pages, however you've got it set up, and 'Select All'. You may get lucky and find an object selected that doesn't appear to have anything in it - it may just be the bit of Helvetica text - it may even be in white which is why they can be very difficult to find. Don't forget to also check the master pages. Have you done the 'flight check'? It will sometimes tell you on what page a font first appears.

I've run into this very issue many times and I usually do as Eggles mentioned and I also open every placed EPS file and select all text and "create outlines" so that I can rule EPS files out as being the culprit.

I know Quark has a "usage" option in the utilities menu where all the fonts used in the file are listed. I assume PageMaker doesn't have a similar option?

As mentioned in my earlier post, Pagemaker has a 'Save for Service Provider' that among other things (like linked and embedded files and colours used), also lists fonts used. However, it only tells you the page in the document that each font firdt appears. So it's not always a big help particularly if that font is 'hiding' in an EPS or as a non-printing character.
