Well... I couldn't quite figure out another place to put this in...

If you want an alternative to Apache you should try out Abyss Web Server X1. Can't say much for security, but its got a web based control pannel and can support PHP/MySQL/Pearl/ASP/SSI etc.

The small footprint is interesting, but having to run PHP as a CGI is not what I would call a good thing.

depends. Many a web host runs php as cgi for security reasons - and I wouldn't use a small foot print server to handle a lot of traffic, anyhow.
