Has anyone worked with an html compiler - i.e. to take html content and produce and ebook or .exe?
If so, can you recommend any. Hopefully based on practical /hands-on experience rather than a google search?

There was an HTML to CHM converter that I used once. Seemed to do a pretty good job if I remember correctly. I'll have to see what it was when I get back to work.

I know this is three months late, but:
I've used two PDF creators for something that could possibly be called ebook production. One automating the use of Mozilla and GhostScript printing to PDF, which was absolutely dreadful when it came to configurations. The other using Prince to generate PDFs for a few essays and reports. I must say Prince is much slicker as an option, and works very well.

I've also seen AIR used for making a self-contained manual browsing tool for one driver CD. Would seem like it requires some more effort than creating a PDF or CHM, but allows a little more interactivity and a lot more browser-like behaviour.

Prince seems to do a fine job. As you probably know already, a "colleague" of mine used it to co-write the book "Cascading Style Sheets: Designing for the Web (3rd Edition)" using HTML + CSS ( plus a few extra ).
