I don't have an iPad, so I'm not sure how they do it, but I think it should be relatively easy to switch images with javascript. The fade transitions should be the only hard part, but I think most browsers nowadays support scripts and CSS for blending layers. If you can't do it like that, you can probably use something like ImageMagik to generate transition images serverside, which you can change in stages. Does this sound like what you're trying to do?
