Around how much trouble would I get into (browser wise) if I made an image map 512px wide by 256px- pixel by pixel?

No trouble except for the two year downloading time of the page.

How about a server-side image map? Those go pixel-by-pixel automatically, and leave it up to the server to do something with the x,y coordinates that were clicked.

mmm... I like the server-side control over it, but I want the pixel info to- thru the use of javascript- affect the page dynamically...

You could always get the mouse coordinates and do something with those. Just avoid that pixel-by-pixel image map, that'd be a killer with memory and download time.
