Hiroki: This is going to sound like stating the bleeding obvious but you use them to set your maximum heights and widths of things.

I think the best way to use them isn't on header of paragraph tags but on DIVs if you were making a CSS-only design which you wanted to be liquid but also you wanted to stop it breaking with low screen widths or looking too strateched on larger resolutions.

Browser support is improving - it looks like Moz and Op5+ are in and IE 6 is still no good:
