So last weekend my buddy Simon had his first bodybuilding competition (Mr. San Francisco 2nd in the Novice Middleweight and 3rd in the Open heavy middleweight class) and afterwards we roasted a whole 40lb pig. It took 14 hours with 15 coals about a foot underneath him 2 in each quadrant. It was the most succlent tender meat I've ever had and I highly recommend it. According to the mississippi state U website you have to put a Miss. State hat and sunglasses on it's head an ole miss hat on it's ass and name it before it will cook. Well since we're from the Bay Area we put a Cal hat and sunglasses on it's head but couldn't find a stanford hat for it's ass. Anyway we named it Snowball (a la Animal Farm) and even without the Big S hat it cooked just fine. |

I've never actually done anything like that before, but it looks like it would be pretty tasty. Do you cook it with the apple in the mouth, and does that do anything for the flavor of the pig? |

Actually the apple is how you can tell when the pig is done. When it's done cooking it will bite down on the apple |
