Well, if you want specific characters you could always do the general who led the assult on Echo Base from the lead AT-AT, you see him in a few shots, one of thme talking to Vader via holo-com.

General Veers kicks ass.

Motti is a stooge. The only thing he actually did was bitch and whine

Plus, he's too closely associated with Tarkin. Veers represents the efficient militancy of the empire, and broadens the scope of the group.

A shot of him standing in the cockpit of the imperial walker would be great.

Veers, pfff, Everyone knows Yoda is the best Star Wars charactar. Also the only charactar that wasn't ruined by Star Wars I & II. They should have kept him as an animatronic puppet though, IMO.
