I've never used Illustrator, but knowing PhotoShop, Image Ready and Elements, the menus are pretty much the same, so it shouldn't be that different in Illustrator. There must be an Image or Color Mode menu somewhere with RGB, CMYK, grayscale, Duotone, LAB, ... it could even be in the options when you load/import a file.
