Don't want to be rude but what about you check the manual that came along with your license of Illustrator, or check Illustrator's help/tutorials, or ask the almighty google

Not rude at all, checked the help files, looked through my Illustrator (Hints & Tricks Book), and looked around online.... ended up just saving it as an EPS and importing it into PS and grayscaling there....

Glad you didn't took my previous post the wrong way.

I've never used Illustrator, but knowing PhotoShop, Image Ready and Elements, the menus are pretty much the same, so it shouldn't be that different in Illustrator. There must be an Image or Color Mode menu somewhere with RGB, CMYK, grayscale, Duotone, LAB, ... it could even be in the options when you load/import a file.

It always seemed stupid to me that so many of the features that Photoshop and Illustrator share have to be accessed in different ways.

Filter > Colors > Adjust Colors

or

Filter > Colors > Convert to Grayscale

Yeah, it's one of the things that has limited my use of illustrator. very frustrating...

wow thanks guys. only bummer is gradients need to be done manually which sucks because a few of the logos we have have several gradients....

A way to speed up the gradient conversion if you have the same gradient applied repeatedly...Modify it as it is applied to an object. Once you've got it as you like, hold down the option key while dragging it over the original gradient in the swatches pallete and it will replace it in all occurences
